Feeding families for the long weekend

We went the distance over Labor Day weekend, three days of service that featured two small, family-style meals, a smorgasbord for 230 people, a rained-out beach barbecue that still attracted 90 and meals that went from 50 reservations to 90 at the door.

Here’s how we fed them:

Friday dinner
Sweet & sour pork
White rice
Asian-style vegetables
Warm flatbread with garlic butter
Tossed salad with Northern Italian dressing
Cherry cheesecake (Julie — I’ll do a parfait for the g-frees)

Saturday breakfast
Roasted tomato and mushroom frittata
Bacon and cheddar frittata
Sweet potato homefries
Homemade biscuits

Saturday lunch
Turkey sandwiches
Assorted chips
Cream of broccoli soup
Baby carrots and celery sticks with Ranch dressing

Saturday dinner
Garlic roast beef
Fried chicken
Roasted potatoes
Green beans in mushroom-cream sauce
Green Hill Farm roasted vetegatbles
White and whole-wheat dinner rolls
Mixed greens salad
Chocolate bread pudding, berry bread pudding

Sunday breakfast
Belgian waffles
Sausage, turkey sausage
Cinnamon-raisin oatmeal
Banana-chocolate chip muffins

Sunday lunch
Pita bread
Chicken in curry sauce
Orzo (rice-shaped pasta) with carrots and fennel
Jicama-apple coleslaw
Cucumber-dill salad
Gala apples
Vanilla cupcakes with chocolate  icing

Sunday beach barbecue dinner
Pulled pork
Macaroni & cheese
Baked beans
Corn on the cob
Corn muffins
Tossed salad with selection of dressings
Italian ice
