Summer camp in cold

What a great weekend!

In my 30 years in and around Christian camping, I’ve never seen a camp try to pull off what we did at Sac this weekend: Offer a winter camp program that didn’t require group leaders. Using some of our summer staff, we offered a program for more than 50 local teens, many of them unchurched, that duplicated the social, recreational and spiritual experience of camp.

And we tried to do the same with the food. Here’s a look:

FRIDAY DINNER
Grilled chicken
Penne with tomato-cream sauce
Green beans with Parmesan cheese
Caesar salad
Homemade focaccia
Ganache-iced brownies

SATURDAY BREAKFAST
Pancakes and chocolate chip pancakes
Sausage patties
Baked oatmeal
Mandarin oranges
Yogurt

SATURDAY LUNCH
Mashed potato bowls
Popcorn chicken
Country chicken gravy
Baby peas
Broccoli, carrots, celery and cauliflower with Ranch dressing
Apples and oranges
Chocolate chip cookies

SATURDAY DINNER
Carnitas and chicken tacos
Cilantro-lime rice
Black beans
Lettuce, tomatoes, cheese, sour cream
Tortilla chips with salsa
Chocolate pudding with whipped cream

SUNDAY BREAKFAST
Scrambled eggs
Bacon
Homefries
English muffins
Banana-chocolate chip mini muffins
Apples and oranges

SUNDAY LUNCH
Barbecue pork sandwiches
Macaroni and cheese
Coleslaw
Dill pickles
Broccoli, carrots, celery and cauliflower with Ranch dressing
Raspberry Jello
