Spring: It’s what’s for dinner on Saturday

We get back into smorgasbord mode on Saturday when we’ll pack Sacandaga Bible Conference’s Hilltop Dining Hall for our second annual spring banquet, with a garden-fresh menu and a concert by Brian Free & Assurance.

I thought you’d like to get a peek at what you’ll be eating.

Dinner starts at 5:30. The cost is $12 and reservations can be made by calling the camp office, 883-3713.

MAPLE-CRUSTED PORK LOIN

Frasier’s maple sugar, cumin, coriander

HERB-ROASTED CHICKEN

Lemon, olive oil, garlic, fresh herbs

ROASTED ASPARAGUS

Tarragon butter

SUGAR SNAP PEAS

Honey, ginger, fresh lime, sesame oil

HERBED RICE

Coconut milk, curry essence

MESCLUN GREENS

Grape tomatoes, Palatine cheese, assorted dressings

FOCACCIA

Basil, thyme, olive oil

BREAD PUDDING

Strawberry-mint salad, fresh whipped cream
