Vegan pancakes even I could love (and do!)

We had a fish-eating vegan guest last week, which thrilled me.

No, seriously, while accommodating food allergies and dietary needs can be time-consuming, frustrating and sometimes costly, I was pretty happy, because it meant a chance to dust off two of my favorite things to serve — fish tacos and a really great oatmeal-banana pancake recipe suitable for vegans.

It’s a simple recipe, getting some extra fiber from whole oats. which get buzzed in a food processor with other ingredients, including ripe bananas and almond milk. Start to finish, it takes no more time than any other homemade pancakes.


  • 1 1/4 cup old-fashioned oats
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups almond milk
  • 2 ripe bananas
  • Nonstick spray

Preheat a griddle until a drop of water dances around.

In the bowl of a food processor or blender, process all ingredients except bananas until blended. Add bananas and blend until smooth.

Apply nonstick spray to griddle.

Pour batter in 4-inch circles. When pancake is bubbling and edges are set, flip and continue cooking until cooked.

Servings: 4.
