Midweek meals: Men, boys and others

There have been only two weekdays this week where we haven’t fed guests.

This is not one of them.

Tonight, we welcome a men’s group from a nearby church — including a family I hope to buy a lot of produce from this spring and summer. They follow a youth group that was doing a midweek work project at camp and last weekend’s crazy eight-meal marathon.

Fortunately, unlike some of the other camps I’ve been to — including The Big One — we don’t serve the same meals over and over. There’s a bit of synergy with the last menu because of ingredients we have on hand. But it’s refreshing to cook new food every week.

T H E   M E N U

Tuesday lunch

  • Ham, turkey and cheese sandwiches on kaiser rolls
  • Potato chips
  • Corn, black bean and roasted red pepper salad
  • Pasta salad with ham, red onions and bell peppers
  • Homemade chocolate chip cookies

Tuesday dinner

  • Penne with tomato-cream sauce and seared chicken breasts
  • Green beans with roasted tomatoes and red chili flakes
  • Cauliflower and broccoli with sharp cheddar cheese
  • Honey-glazed carrots
  • Jalapeno-cheddar corn muffins
  • Tossed salad with assorted dressings
  • Chocolate mousse cake

Wednesday breakfast

  • Bacon and cheddar fritattas
  • Sliced ham
  • Tater tots
  • Assorted chocolate doughnuts
  • Yogurt
  • Fresh fruit assortment
  • Cereal and milk

Friday dinner

  • Pizza: Pepperoni, sausage and pepper, cheese and roasted vegetable
  • Chicken wings: Hot and barbecue
  • Green bean salad with red bell peppers and red onions
  • Tossed salad with assorted dressings
  • Gingered peaches with vanilla Greek yogurt and Rulison honey

Saturday breakfast

  • Banana-chocolate chip pancakes
  • Bacon and sausage links
  • Homefries
  • Assorted Danishes
  • Yogurt
  • Fresh fruit assortment

Saturday lunch

  • Roasted red pepper soup with oyster crackers
  • Fish tacos: Spiced tilapia and shrimp
  • Corn and flour tortillas
  • Shredded lettuce, chopped tomatoes, shredded sharp cheddar cheese
  • Salsa, cilantro, green chilies, scallions, lime wedges
  • Black beans
  • Chili-smoked corn
  • Ice cream and sorbet
